The best thing about the Instant Pot? You can make your whole meal at the same time in the same pot! This healthy meatloaf came out so delicious. It will easily become a dinnertime favorite for us. The potatoes were the perfect side and it couldn’t have been easier to make!

Meatloaf and Mashed Potatoes
Delicious Pressure cooker meatloaf and potatoes that are the perfect comfort food!
Ingredients
FOR THE MEATLOAF
- 2 lbs Organic grass-fed ground beef 85% lean
- 1 cup breadcrumbs I used gluten free Udi’s brand
- 2 eggs
- 1/4 cup diced onion
- 2 tsp garlic powder
- 2 tsp dried parsley
- 1 tsp salt and pepper
- 1/2 cup Honey BBQ sauce
- foil
FOR MEATLOAF TOPPING
- 1/4 cup Ketchup
- 3 tbsp Honey BBQ sauce
FOR THE POTATOES
- 3 lbs yellow potatoes
- 1 cup chicken broth
- 2 tbsp organic grass-fed butter
- 1/4 cup sour cream
- 1/4 cup whole milk
- 1 tsp garlic powder
- salt and pepper to taste
Instructions
POTATOES
- Wash and cut your potatoes into roughly 1.5 inch cubes. Lay them in the bottom of your pressure cooker, add 1 cup of chicken broth.
- Place rack that comes with the pressure cooker over the potatoes
FOR THE MEATLOAF
- In a large bowl mix together all of the ingredients for the meatloaf. I always use my hands and be forewarned…your hands WILL feel frostbitten!
- Take a sheet of foil and lay on counter. Put meatloaf on the foil and shape into a typical meatloaf shape. Fold the sides of the foil around the loaf. Place it on the rack in the pressure cooker.
- Set pressure cooker to high pressure, 25 mins (I have read this will vary depending on your brand of PC) I actually had to pop mine in the oven at the end at 350 for a couple minutes. You’ll want the inside temperature to be 155 degrees.
- Once it is done cooking, Spread the meatloaf topping on top, broil for 3 minutes.
FOR THE POTATOES
- Add butter, sour cream, whole milk and spices. Mash potatoes while still in the instapot/pressure cooker.
- Serve together!
Thank you so much for posting this! I was dying to make it! A few questions. What kind of grass fed butter do you use, i find it hard to locate at my grocery stores here in FL. Also can you sub almond milk for whole milk for the potatoes and Greek yogurt for the sour cream? Thank you!! 🙂
Oh yes!! You can totally sub Greek yogurt and unsweetened almond milk for the potatoes! We typically just buy the simple truth organic grass fed butter they have at Kroger. Do you have a Kroger nearby?
